Where a server's player count comes from

The player count in the Java server list is reported by the server itself. When the game pings a server, the server answers with its version, the maximum and current number of players, and optionally a short sample of player names. Server software can change what it sends, and the ping can be switched off entirely.

That makes every listed count a claim rather than an independent measurement. Totals for all servers, or for the biggest ones, can only be estimated from what servers report and what server lists collect.

Realms
At most 10 other players online at once, or 2 on Bedrock's Realms Core, plus the owner.
Bedrock Dedicated Server
Allows 10 players out of the box, set by max-players in server.properties.

How many servers exist, the popular game modes, the largest servers and server sizes all build on those reported numbers.
